Raw Cashew Milk

I recently watched "Food Matters", an excellent documentary about the impact food has on our health. I learned that a couple handfuls of cashews has the same therapeutic impact as Prozac. They are also high in magnesium and a healthy source of protein. The molasses in the recipe makes this milk sweet, and is loaded with iron, calcium and other nutrients.

Ingredients:

4 cups water
1 cup raw cashews
3 tbsp raw honey
2 tsp unsulfured blackstrap molasses (optional)
1 tsp pure vanilla

Directions:

Place water and cashews in a blender and blend until white and frothy, about 1 to 2 minutes. Add remaining ingredients and blend well. Refrigerate before serving. Omit molasses for specific carbohydrate diets. Source: www.foodsensitivityjournal.com
