My sister and I took a road trip a few months ago and stopped at the Go Healthy Cafe in Eugene, Oregon to try their gluten free and vegan menu offerings. We ordered the Dancing Avocado salad with a dressing that was so creamy and delicious, it was hard to believe it was dairy free. Reluctant to hand over the recipe, the owner was kind enough to tell me he uses vegenaise in many dressings to make them creamy. Vegenaise is an egg and dairy free mayo like product that can be found in the refrigerator aisle of most natural food stores. It contains soy.
After some experimenting, I came up with the following recipe.
1 large avocado, peeled and cored (about 1 cup of flesh)
3/4 cup vegenaise
1/4 cup lemon juice
2 tbsp water
1/2 tbsp garlic, minced
1/8 tsp salt
Place all ingredients in a food processor and process until smooth. Store in an airtight container in the refrigerator. Serves 4 to 6. Source: www.foodsensitivityjournal.com
