This is a gluten, dairy and sugar free makeover of a recipe for Apple Oven Cake published in Sunset Magazine. It is easy to make, and sweet enough on its own that you can skip topping it with syrup.
Ingredients:
2 tbsp coconut oil
2 tbsp pure maple syrup
1/8 tsp cinnamon
1 sweet apple such as Fuji, sliced
3 large eggs
1/4 tsp salt
1/2 cup almond flour
1/2 cup apple juice
Directions:
Preheat oven to 425 degrees. Mix eggs, salt, flour and apple juice in a blender. Melt coconut oil in a 12 inch ovenproof frying pan over high heat. Add maple syrup, cinnamon and apples, and saute for about 3 minutes, until apples are beginning to soften. Pour egg mixture over apples and place pan in oven. Cook for 15 minutes. Serves 2 to 3. Yum! This looks just great, and so easy too! Now all I need is a skillet I can actually put in the oven! :-) I've never used coconut oil - does it taste like coconut?

Thanks! Coconut oil does not have a strong coconut taste. It's slightly sweet and rich. Unrefined coconut oil is also contains healthy fats, so eat up! Thank you for stopping by!
